I think exterior venting is preferred, but often not done.  Bert's reasoning on the commercial stuff is good.  As to those fans that vent indoors, the biggest mistake is that the grill screen that doesn't have a carbon filter.  When there's no filter the fans just move smoke from one side of the room to the other, or around the house.
