I noticed on the default template that under each menu heading (on the report) a short description of what that section entails.  How does one go about adding this type of thing with setting up a customized template?

That's the Edit Documents feature. Click on Edit Documents then you can add a new document and set it to print at the top of a section, or on it's own page before a section. Or you can just add to the ones that are already in use (i.e. Bathroom Intro). Check out How To Add/Edit Documents for the animated tutorial on Documents.
